Tamales chulas
Maiz Maricon is a project that celebrates ancestral food practices, queer identity and professional skill.
All tamales are made using non GMO corn that is ground in a local molino. Tamales can be frozen for up to 6 months if placed in freezer bags. To re-steam the tamales place in a steamer for 10 minutes. If steaming from frozen allow them to steam for 20 minutes until soft tender and the internal temperature reaches 165 degrees and tamales are piping hot. I recommend eating tamales like you would any main dish, with sides that compliment it. Salad with acidic vinaigrettes (chicory is fab right now) roasted butternut squash to compliment the masa and aromatic rice (my favorite is basmati).
